Blueberry, Redcurrant & Avocado Smoothie

Blueberry Redcurrant & Avocado Smoothie

When I saw the blueberries and redcurrants on special offer yesterday in my local shop I grabbed a few packs. Happy thoughts of smoothies and possibly a berry crumble to be made were making me hungry on the drive back home .

For starters this morning I threw some of them into the liquidiser and came up with this smoothie. It’s velvety smooth and indulgent and packed with blueberries, redcurrants and mildly sweetened with xylitol, with an avocado thrown in for good measure. Hope you like?

Serves 2

Ingredients:
250g blueberries
200ml almond milk
100g avocado
50g frozen redcurrants
1 tablespoon hemp seeds
1 tablespoon freshly squeezed lemon juice
1 teaspoon xylitol

It’s worth connecting with me on Facebook or Pinterest as I update them with useful links frequently. It’s another avenue you may find some useful tips or recipes. There’s a lot happening on Facebook this week so worth having a look.

Right I”m off have to take pics of some biscuits and sure then I’ll just have to scoff them off with a cuppa (hard job being a food blogger?).

Feel free to comment below and I’ll reply to you as soon as possible.

Until next time if you have this glorious weather (summer at long last) hope you’re getting a chance to enjoy every minute of it.
