Lunch in a Hurry: Try My Filling Mixed Vegetable Salad with some Hot Soup:
I was heading into Dublin city centre yesterday afternoon and needed a quick yet easy lunch. So along comes my mixed salad. What I love about salad is that you just fire in whatever food you like and with a tasty dressing it all works. Of course it’s obviously all foods you like. Anyway here’s a handy combination to try, I used lemon juice but I’m sure if you’ve the time a suitable dressing would works wonders.
It’s just a mix of shredded carrot and courgettes, chopped red onion, some pea shoots, rocket leaves, a drizzle of lemon juice and a sprinkling of freshly ground pepper with some spelt bread. There are no quantities it all depends on what you have around and just grate, chop and slice how much you want of everything and enjoy. This with a hot bowl of broccoli soup, lunch sorted.
