Zesty Fresh Fruit Salad

Last week when we had a rare scorcher of a day the thirst was getting to me. You know one of those days when water just isn’t doing it’s job of rehydrating you – a thirst quencher being needed urgently? Say hello to this zingy fresh fruit salad which excited my taste buds and better still it cooled me down in the heat.


Zesty Fresh Fruit Salad

(Print Recipe)

Serves 1-2


1 large orange

2 kiwis with skinned removed

2 pears with skinned removed

50g chopped pineapple

Berries from 1/2 pomegranate

2 tablespoons agave syrup

Juice of 1 Lime
2-3 tablespoons coconut cream or dairy-free yogurt

How To:

Fruit Preparation:

Cut the fruit (except the pomegranate) into nice shapes (slices, cubes etc) over a bowl (that way any juice escaping will be captured to be used to pour over the fruit later).

Place them into suitable serving dishes or glasses. Remove the berries from the pomegranate and and mix gently through the chopped fruit.

The Finishing Touches:

Add the agave syrup, lime juice to the leftover juice from the fruit and mix to combine. Taste and adjust to your liking.

Pour over the fruit.

Top off with some coconut cream or dairy-free yogurt.

Serve immediately or store in the fridge for later.

It may just be broccoli soup today given the overcast scene that I’m viewing from my sitting room. Oh well it’ll go down well with some crusty spelt bread.
