Day 3 was pretty easy. Had the bircher again and then ate out for lunch, followed later with a tasty, fresh and zingy sandwich, coupled with some leftover Carrot and Red Pepper soup from Monday.
Breakfast: Homemade Bircher
Lunch: I dined at Cornupia in Wicklow Street today and enjoyed:-
- Soup: Root Vegetable, Ginger and Butterbean
- Main: Squash, Tofu & Carrot curry. This filling curry also had some radishes, green beans, broccoli and cucumber. The sides with mixed salad and garlicky potato salad and wholegrain rice.
Veggie Sandwich with leftover Carrot & Pepper soup (from Monday).
The sandwich consisted of grated carrot, chopped tomato, cucumber slices, slices of beetroot, drizzled with lemon juice.
Snack: 2 dates
Another successful day and no hunger pangs, whohoo.
Roll on tomorrow.
