Avocado & Banana Mousse with Raw Cacao Powder

How the mousse started

I enjoy going into the Health Shop in the Frascati Shopping in Blackrock, Co Dublin.  Although it’s not my nearest it is the one where I find the staff so helpful, knowledgeable and friendly that you just want to keep going back.  Of real interest to me though is that they just love talking food.

Take for example last week Karen, one of the staff, and myself were discussing desserts, my upcoming book and all things sweet. With that Karen urged me to try an avocado and banana mousse and quickly scribbled down the ingredients, leaving my imagination to come up with the quantities.

Well Monday I put my bananas in the freezer and didn’t get around to try the recipe out until yesterday. It took a couple of attempts and in the end to get the colour and texture I wanted.  It ended up being a delicious thick mousse. It doesn’t taste too sweet so you need to taste it along the way and adjust the sweetness to your liking.

Quick & Easy: Mousse / Sauce / Smoothie:

The handy thing about this recipe is that once the banana is frozen it is really quick and easy.

This mousse is versatile. As Karen suggested depending on how much liquid you put in it can be transformed into a chocolate sauce or with lots of milk into a smoothie. So a win win?.

Serves 2:

Mousse: Goodies you’ll need

3-4 tablespoons raw cocoa powder
1 ripe avocado (you’ll need 145g of the flesh)
1 medium ripe banana, frozen in chunks
1/4 cup rice syrup
1 tablespoon maple syrup
2 teaspoons vanilla extract (optionl)
1/4 cup rice milk

The Work Part!

Scoop out 145g of the flesh from the avocado and place it in a mini-processor.
Add in the rest of the ingredients to the processor.
Pulse them to break up the banana, then whiz them up in the processor for a few minutes until the mixture is totally smooth.
Check the sweetness and adjust according to your taste, but be careful not to make it runny.
Transfer to 2 small glasses and place in the fridge for about an hour to thicken a bit more.

New Ingredient used:

The cocoa powder I used was raw cacao powder by the Raw Chocolate Company. They billed it as @tiny titans of flavour & nutrition. Rich in antioxidants.  You can also use Green & Black cocoa powder.
