Chocolate, Strawberry Custard Pudding

A friend challenged me over the weekend to come up with a dairy-free dessert that he’d eat.  This is what I came up with.  Hope you like and find it useful for yourself.

Serves 2
Stage 1 – Chocolate Layer:
125g Dark Chocolate*
¼ cup of Honey
125ml Oatley Cream

Melt the chocolate with the honey and Oatley cream.
When melted stir gently to combine and get a smooth consistency.
After it has cooled divide equally into 2 bowls or glasses
Leave to set in the fridge for a couple of hours.

Stage 2 – Custard Layer:
550 ml of Almond milk (original flavour)
3 tablespoons of dairy-free Custard Powder
1 tablespoon of Amaretto
6 Strawberries, de-stalked and cut them into bite-sized pieces
Extra Strawberries for decoration

Best to follow instructions on how to make from the pack.  I added in more custard powder than stated as I wanted a thicker custard.  In short you just put the 3 tablespoons of custard powder in a cup and add in some of the milk to make a smooth paste. Then heat the rest of the milk with the Amaretto, bringing them to boiling point and then remove from the heat.   Add in the custard powder paste and stir to combine. Return to the heat and keep stirring for about a minute and the custard should thicken.  Leave to cool and once cooled pour on top of the chocolate which should have set by now.  Then add about half of the strawberry pieces into the custard and leave to set (this depends on the type of dish you use).  Any leftover strawberries can be used for decoration on top and on the side of the place with some chocolate pieces.

There is no sweetener added to the custard above so taste it to be sure you like it.  Just add in some sugar, xylitol or syrup to achieve the sweetness you like. We enjoyed it like this but did notice the lack of sugar. Amaretto did make up for it though. 

Pour some soya cream on top just below the edge and sprinkle some granola (ensure suitable for you), or some chopped toasted nuts, grated dark chocolate or some add 2 small strawberries on top.

Serve immediately and enjoy.

Just Wholefoods All Natural Custard Powder
*Dark Chocolate – ensure it is dairy-free and wheat-free. I used O’Connaill’s Chocolate dairy-free and wheat-free dark chocolate
